Carrot muffins

Ingredienser
- 100 g butter (softened)
- 100g sugar
- 2 eggs
- 100 g wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 100 g grated carrots (about 2 medium-sized)
- and 50 ml milk

- Muffin tin or small baking tins

- Grease with a brush or place paper muffin cups in a muffin tin. Beat the butter and sugar with a whisk until light and fluffy. Add the eggs one at a time
- beating well between each. Mix the dry ingredients (flour

- baking soda
- cinnamon
- salt) in a bowl with a dough hook. Stir the dry ingredients into the butter mixture
- alternating with milk
- until the dough is smooth. Add the grated carrots and
- if desired
- chocolate chips/nuts
- and stir gently with a dough hook. Fill the muffin tins about 2/3 full with batter – children can help with batter scoops or spoons. Bake in the oven for 20-25 minutes at 180°C (adult helps with the oven). Let them cool slightly and decorate with powdered sugar if desired.
